CUVÉE BACCHUS CHÂTEAU LE GRAND MOULIN

I love wines for their delicacy and complexity, and I am passionate about the right bank of Bordeaux vineyard. In 1980, without hesitation, I proudly took over the estate my great-great-grand-father had created in 1904 : Château Le Grand Moulin. When I got the farm, the culture was not only vines and the vineyard was only 7 hectares. Therefore, I decided to give it its original purpose and reorganized it, modernized it and expanded it to reach 75 hectares of vines. Château Le Grand Moulin is a pillar among my three wineries and represents my family legacy that I am proud to share with my two daughters today : Carole and Pauline. The building was built at the beginning of the 20th century and follows the traditional Gironde region architecture. It has become our family vineyard’s symbol.

Village: Saint-Aubin-de-Blaye
Terroir:
Clay and clay-limestone soils - South / south-west / north-west exposure - 25-meter-high - 25-year-old vines
Winemaking and ageing:

Parcel selection from cool clay-limestone soils. Harvesting at full ripeness with destemming and rigorous grape sorting to retain only the finest berries. Pre-fermentation cold maceration followed by temperature-controlled alcoholic fermentation. Approximately 10 days of maceration with lees stirring to enhance roundness.

Blend:
100% Merlot
Tasting comments:

Deep colour with purple highlights. The nose reveals aromas of sun-ripened red berries. The palate opens with fine, smooth and inviting tannins, supported by rich, juicy fruit. Beautifully balanced throughout.

Soil of sandy silt – Subsoil of clay – 77-meter-high – 25-30-year-old vines
Winemaking and ageing:

Mechanical harvest in September. Maceration before fermenting and 5 to 8 hours before pressing for Sauvignon blanc grapes. Low-temperature fermentation (16°C). Ageing on lees during two weeks before sulfite input. Tangential filtration.

Blend:
100% Sauvignon Blanc
Tasting comments:

Bright, pale yellow colour. The nose is classic Sauvignon Blanc, with ripe citrus aromas and hints of boxwood. The palate is supple and fresh, leading to a finish that reveals excellent aromatic ripeness.

Food and wine pairings:

Salmon fillet with dill, fresh goat's cheese and herb risotto.

Terroir:
Sandy gravel soils and clay-sandy subsoils - east/east-south sun exposure - 28-year-old vines
Winemaking and ageing:

Mechanical harvesting in early September. Traditional vinification in stainless steel and concrete tanks. Cold maceration depending on grape quality. Slow start to alcoholic fermentation with pump-overs two to three times a day, followed by rack and return. Gentle maceration for 15 to 20 days at 25°C. Ageing with oak chips.

Blend:
80% Merlot, 15% Cabernet Sauvignon, 5% Malbec
Tasting comments:

Deep colour with purple highlights. The nose is ripe, revealing concentrated fruit aromas with delicate hints of spice. The palate opens with a lively attack, leading to smooth, well-integrated tannins. The ripe fruit retains excellent freshness, resulting in a velvety, generous and highly enjoyable wine.

Mildly spiced roast chicken and roasted root vegetables
